Home made Pizza

I recently went to Denver with my aunt to visit family and just relax, while we were there my other aunt Lorena had made home made pizza they were the yummiest pizza's I have had in a really long time. I asked for the dough recipe which she had memorized. What joy!
Here are some pictures of pizza I just made last week for Lala and our two friends.

PIZZA DOUGH!
1 1/3 cup water
1 tsp salt
1 tbsp olive oil
4 cup flour
1 pkg yeast
Mix ingredients together and let it rise, beat down once then use.
Bake pizza @ 400 degrees 12-15 min
can put dough in the fridge for a few days.

I had some left over dough and made some bread which didnt turn out. I also added olive oil that was infused with garlic which made the pizza even yummier!
add pizza sauce and any toppings you like

Romaine taco's

So recently I have been working on changing my eating habits which have hit a brick wall. I did get this lovely recipe from one of my dear friends in Utah while I was still living there.
Take romaine lettuce and add a lean meat to it.
I shredded some cucumber
Add feta cheese, diced onion, tomato; dress w/ balsamic vinegar

This is a very healthy and filling meal. I find that 2 of these work out just fine. I usually eat them with some fresh strawberries afterward to have a bit of sweet.

5 Bean Taco Soup







Things you will need:
1 Can refried beans,1 can kidney beans, 1 can ranch style beans,1 canbaked beans and 1can black beans. You will also need a pack on taco seasioning, 1 can corn, 1/2 cup of sour cream, a bag of tortilla chips, ans 1 cup greated chedder cheese.

In a big pot combine all cans of beans and can of corn. Bring to a boil. Add 2 cups of water and stir in taco pack. Let boil for about 10 min.

Grab a bowl put some chips in bottom, pour Bean Soup on top. Sprinkle cheese on top and add a scoop of sour creamon the very top.
On my pics there are no sour cream I diden't have any and I also didnot add the corn, and pinto beans .
We love this dish feel free to add other things to this dish to make it personal. Enjoy

Ceviche











To make
2lbs fresh Shrimp
1 small onion
3 Cucumbers
4-6 Roma tomatoes
1/2 bunch Cilantro
2-3 Lemons juiced
Salt, Pepper, and Garlic
Jalepeno (optional)
Skin and devein shrimp cut into small pieces or a size that you would like. Put a pot of water on to boil. when water has begun to boil put shrimp into water and cook 3-5 minutes or until pink, do not over cook they will shrink and be too tough. Once cooking is done quickly add to cold water to shock the shrimp and stop the cooking process.
Dice tomatoes, onion, and cucumbers. With cucumber peel and core them by taking a spoon putting the tip into where the seeds begin and pull the spoon down the length of the cucumber.
Put vegetables into a bowl add lemon juice and finely shredded cilantro. I cut up a portion of the stems because the flavor is much stronger. Drain shrimp and add to the bowl. next you will want to add salt and garlic powder/salt which ever you perfer.
For those who like spice add some diced up Jalepeno (seeds are the hottest part of the pepper).
Extras
I add avocados, ketchup, and Tapatio chile sauce. This is the way that I learned to make this and I just love it.
We eat with tostada shells
